At my house no one wants to eat bananas when there’s even a slight speck of black spots on them.
Namely, my four year old who points it out saying that the bananas are ruined.
Of course, at 5:30 a.m. my eyes are barely open around the breakfast table. As she goes on about how that we should go grocery shopping for good bananas.
Lol, kids don’t miss a thing do they? I’m too frugal to let anything go to waste.
Therefore, I decided to put those bananas to use by whipping up a batch of my homemade Banana nut muffins.
Being a baker there’s always baking supplies (for example muffin liners, walnuts, sprinkles etc.) in the food pantry.
I tend to shop with the idea that I’ll use this soon while strolling through the grocery isle.
With just a bowl, a mixing spoon and readable ingredients, banana nut muffins were ready in the nick of time.

Not to mention the enticing and delicious aroma that lingers while these muffins bake and even after they’ve been removed from the oven.
Later that day, I took these banana nut muffins to church and before I knew it they were gone.
Another bonus to these easily made banana nut muffins is that they’re low in sugar.
When overripe bananas are used, it serves as a natural sweetener, so that the amount of refined sugar can be reduced.
With a bake time of just 20-25 minutes these banana nut muffins can be will on the table before the family is seated for breakfast.

- 3 bananas very ripe
- 1 3/4 cups All purpose flour
- 3/4 cup Granulated sugar
- 1 tsp Baking powder
- 1/4 tsp Salt
- 2 Eggs Large
- 1/2 cup Unsalted butter melted and cooled
- 1 1/2 tsp Vanilla extract
- 1/4 Baking soda
- 1 cup walnuts chopped
- 2 tbsp Milk
Preheat oven at 350 degrees.
prepare muffin pan with liners.
In a medium sized mixing bowl, lightly mash bananas.
Add sugar, melted butter, vanilla extract, milk and eggs to mashed bananas. mix until everything is combined.
fold in flour, salt, baking soda and baking powder.
pour batter into prepared muffin liners.
bake for 20-25 minutes or until a toothpick inserted into the middle comes out clean.
8. cool and enjoy.
If salted butter is used in this recipe
, ignore the 1/4 tsp of salt.
